I never realized that cutting my own kernels is just as easy as cracking open a can or frozen bag of corn kernels! They were so crunchy after they were cooked, as opposed to the soggy canned stuff! It was really yummy and I am looking forward to making them again!
Fresh Cut Corn Kernels
Yields 6 servings
To Prepare the Corn
1. Shuck the three corn of their leaves and hair, and then rinse them off with a little cool water.
2. Hold the corn upright on a plate or cutting board, carefully place the knife amongst the kernels on the top of the cob.
3. CAREFULLY while watching the placement of your fingers, run the knife down the cob, cutting the kernels off as you go. Do this all the way around the cob, and to the remaining 2 cobs.
4. Boil all of the kernels over medium heat until they soften a little bit in boiling water.
